Summer is saved! In case you missed the news last week, we were devastated to hear the news that Nabisco quietly discontinued its Famous Chocolate Wafer cookies. Yes, the cookies that were the backbone of so many summer desserts are no more. What will become of our beloved icebox cakes?!

While we wrote about some substitutes, there’s no perfect replica of those thin, crispy cocoa cookies. Luckily, there are some creative ways to skirt around 1-1 substitutions. From chocolate chip cookies to graham crackers to ice cream sandwiches, these brilliant recipes replicate that classic, creamy icebox cake delight, with no chocolate wafer cookies required. Time to dig in, and maybe clear some space in your freezer.
